Citrus fruits, with their natural acidity and aromatic zest, play a crucial role in the preservation process. Let’s delve deeper into how citrus fruits can be utilized to preserve other fruits and vegetables.

  1. Preventing Browning: One of the most common uses of citrus fruits in preservation is to prevent browning in fruits like apples and avocados. When these fruits are sliced or exposed to air, they undergo enzymatic browning, which alters their appearance and flavor. However, by simply coating the exposed surfaces with lemon juice, which is rich in citric acid, the oxidation process is inhibited, keeping the fruits looking fresh and appetizing for longer periods.
  2. Enhancing Flavor: Citrus zest, the outer colored part of the fruit’s peel, is bursting with essential oils and aromatic compounds that can infuse other ingredients with delightful citrus flavors. To utilize citrus zest in preservation, it can be carefully removed from the fruit using a zester or grater and then dried. Once dried, the zest can be added to sugar or salt to create flavorful blends that can be used to preserve citrus peels or enhance the taste of various dishes.
  3. Creating Infused Oils and Vinegars: Another creative way to preserve citrus flavors is by infusing oils and vinegars with citrus zest. By combining citrus zest with olive oil or vinegar and allowing them to steep for a period of time, the oils and vinegars become infused with the bright, zesty flavors of the citrus fruit. These infused oils and vinegars can then be used to dress salads, marinate meats, or add a burst of citrusy goodness to any dish.
  4. Making Citrus Marmalades and Jams: Citrus fruits, particularly oranges and lemons, are commonly used to make delicious marmalades and jams. The high pectin content in citrus peels helps to thicken the preserves naturally, while the tartness of the fruit adds complexity to the flavor profile. By simmering citrus fruit slices with sugar and water, a thick and spreadable marmalade or jam can be created, perfect for slathering on toast or incorporating into desserts.
  5. Pickling with Citrus: Citrus fruits can also be used in pickling recipes to add brightness and acidity to pickled vegetables and fruits. Slices of lemon or lime can be added to pickling brines to impart their distinctive flavors, while the acidity helps to preserve the texture and color of the pickled ingredients.

In conclusion, citrus fruits are versatile ingredients that can be used in various preservation methods to enhance flavors, prevent spoilage, and create a pantry stocked with delicious homemade preserves. Whether it’s preventing browning, infusing oils, or making jams, citrus fruits are indispensable allies in the art of preservation.

Oshiomhole, who also served as the former President of the Nigerian Labour Congress (NLC), praised Wike for his developmental efforts and expressed gratitude to the PDP for allowing him to serve as Minister of the Federal Capital Territory (FCT) under the APC government.

Wike, previously a staunch PDP member, supported APC’s Bola Tinubu during the 2023 presidential election after a fallout with his party. As a reward for his support, Wike was appointed FCT Minister.

Oshiomhole compared the situation to a football club letting its “best player” join a rival team. “Thank you, PDP, for giving us Nyesom Wike to help us fix Abuja,” he said. “When you give your best player to another club, you pay a heavy price.”

The lawmaker representing Edo North also joked about the PDP’s decision, saying they didn’t ask for a transfer fee and hinted that the APC might not want to return Wike, even joking about setting up a toll gate to prevent it.

At a New Year luncheon in Port Harcourt, Oshiomhole praised Wike for his contributions to Abuja, highlighting his commitment to the rule of law and environmental regulations.
